Wash accurately the curled octopus in tap water. Dry it. In the meantime put a low but ample pot over heat, 3 tablespoons of oil, tomato sauce and a whole clove of garlic. Cook for some minutes. Add the curled octopus and cook for 20 minutes. Add capers and olives (whole or pitted) and marjoram. Season with salt and keep on cooking for further 20 minutes. Sting the curled octopus by means of the spikes of a fork, so as to understand when the curled octopus is completely cooked. You can also add some hot pepper or fresh tomatoes to taste.
